Vermentino is the grape of choice in our territory. The wine it yields is generally soft, delicate and saline. When the vine is allowed to grow naturally, the wine will show a rich minerality and an abundance of fermentation aromas. For this richness to come through, besides the crucial closeness to the sea, the grapes must be picked at full ripeness, when they turn crisp and take on a golden colour.

    Once the Vermentino grapes reach the winery, they are destemmed and then fall by gravity into open vats, where fermentation begins spontaneously. Then, for a few days, punching-down and cap-wetting take place. After the wine is drawn off at the end of fermentation, it matures for a year in clay jars. Bottling follows.
