Ghiarétolo

In the old vineyards around Sarzana the Merlot grape was once widespread, and I myself found numerous vines scattered here and there. For this reason, one of the first vineyards I replanted was made up of Merlot alone, on a loose, strongly stony soil, to understand its potential in our climate. After so many years, I believe I can confirm that this grape has adapted well to our soils and our climate, giving us a wine not easily recognisable by its variety, far from typical herbaceous notes but also from the heaviness of certain fruitiness.

    The destemmed grapes go to ferment in open vats. After spontaneous fermentation begins, punching-down and pumping-over follow. As with any fermentation in the presence of skins, pressing off is decided according to the characteristics of the vintage. Before bottling, the wine matures for about a further year and a half.

    Ghiaretolo holding. Strongly stony, gravelly soil, facing east. It consists of two vineyard plots, planted in 1996 and in 2004.
