Vermentino is the grape of choice in our territory. The wine it yields is generally soft, delicate and saline. When the vine is allowed to grow naturally, the wine will show a rich minerality and an abundance of fermentation aromas. For this richness to come through, besides the crucial closeness to the sea, the grapes must be picked at full ripeness, when they turn crisp and take on a golden colour.

  • Vinification
    LM Vermentino is the long, macerated vinification of Vermentino. The grapes, once they reach the winery, are destemmed and fall by gravity into clay jars, where fermentation begins spontaneously. Punching-down follows over several days. In these jars the wine remains until late spring, when the fine lees and skins settled on the bottom are separated off. The wine then returns to the jars and stays there until harvest time, before being transferred to prepare it for bottling.
